ingredients2oz Thistle Finch Market Alley Gin
1oz Fresh lemon juice
1/2oz Thyme infused simple syrup
Half barspoon Bee pollen
1 Egg white
1 Thyme Sprig
12 grains Bee pollen
In a cocktail shaker fill with ice and add the first six ingredients and shake vigorously for 15 seconds. Remove the ice from the shaker and dry shake for an additional 30 seconds to full emulsify the egg white. Pour in to a coupe glass and garnish with the thyme sprig and bee pollen on both sides.
